Staff Book Review

Well, it’s been a long 18 months with Covid-19, especially at the beginning of the pandemic and now I’m not in the best of mental state and fitness.   As of last week it is time for me to start getting back into a healthy fitness routine and eating healthy foods.  I was delighted to see the wonderful recipes in this book.  I don’t usually follow a particular fad diet, but after researching the Mediterranean Diet, I was impressed.

The Mediterranean diet is about specific food types: seafood, olive oil, colorful vegetables, and other anti-inflammatory
foods.  “The Mediterranean diet has long been touted as one of the world’s  healthiest diets, renowned for its protective effects against heart disease, cancer, and other chronic illnesses.”

I enjoyed making and eating the “stuffed Avocados, two ways; Crab Salad with Fennel & Zucchini Noodles and Crispy Salmon Piccata”  I’m going through the recipes and I’m sure all the recipes are outstanding.   It is an excellent cookbook and it’s easy to follow the recipes.
~ Rita
