Goshen Public Library & Historical Society
CrockPot Mania!
The Goshen Public Library & Historical Society partnered with the Goshen Food Pantry on a Share Before Shop Black Friday challenge to collect new crockpots for Food Pantry clients. Crockpots were shipped directly to or dropped off at the Library. The project collected double its goal of 75 Crockpots. A multi-language booklet of favorite recipes from the community and a drive for the necessary ingredients will add the 'finishing touches' to the project. The crockpots will be delivered in January!

Joanna's Roasted Vegetable Sauce

A vegetarian-friendly crowd pleaser.
Makes a great "Meatless Monday Meal" for January!

Measurements are approximate. Adjust to your taste and the amount of vegetables you are roasting.  Pour on roasted vegetables of your choice right before serving. (I like carrots, cauliflower, brussels sprouts, and beets.  Where did I first learn this recipe? I don't remember! If it looks familiar, let me know.)  Remember to compost vegetable waste or tie unused leaves and parings into a cheesecloth with herbs to make a 'bouquet garni' for flavoring your home-made soups...

RCLS Sustainability Innovation Consultant

The Sauce:
  • 2-3 tbsp. of olive oil or sesame oil
  • ¼ cup soy sauce
  • 2-3 cloves puréed garlic
  • 1 tbsp molasses*
  • 1 tsp maple syrup (optional)
  • Juice from Â½ lemon
  • Optional: crushed red pepper
*don't have molasses? Add brown sugar instead.

Hint: Add roasted tofu for protein!
