Nothing says Italy like pasta. Some historians believe that Marco Polo introduced noodles to Italy after his journeys to China. There is evidence, however, that the Romans used durum wheat to make a pasta-like noodle called “lagane.” By the 1300’s, dried pasta had gained popularity for its nutrition and long shelf life, but it wasn’t until the nineteenth century that pasta met the tomato.
